As you can see from the photo of my poor banana bread, my husband (or man child) couldn’t resist picking at the bread before I could even take a photo. I know my husband doesn’t like the taste of some whole wheat bread, and he was actually surprised when I told him it was made with whole wheat flour.
I love this recipe because it is so simple, and it comes out moist and delicious.
Add some walnuts, chocolate chips, zuchinni, or berries and make it your own!
INGREDIENTS
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can be reduced)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of whole wheat all-purpose flour
METHOD
Preheat the oven to 350°F (175°C). With a spoon or fork, mix butter into the mashed bananas in a large mixing bowl. Then mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 45 minutes to 1 hour. Cool on a rack. Remove from pan and slice.
